Modules include: Prepare and present different pastes; traditional desserts and cakes; classic and contemporary confectionery; variations on restaurant hot and cold desserts; artistic and decorative skills; chocolate: basic techniques.

3 or 4 year degree/diploma in hospitality management (or related subject) from a recognised hotel school or university; students who have not completed 12 years of education may also apply using relevant work experience; IELTS score of at least 5.0, TOEFL 500+ or equivalent.

The course develops international students skills and techniques in classic patisserie while being introduced to all aspects of the kitchen; the course comprises of 4 months at the College, followed bya 9-12 month work placement and a subsequent 2 months atCollege.
