Research methods (1.0 module); management of risk 1 (0.5 module); management of risk 2 (0.5 module); policy and strategy studies (1 module); epidemiology (0.5 module); food safety management systems (1.0 module); management of outbreaks of food borne diseases (0.5 module); quality management and quality assurance (1.0 module); in part 2 of the programme, students are required to develop with the support of a personal supervisor, a dissertation of approximately 20,000 words; the dissertation allows students to develop specific knowledge in relation to a food safety issue of particular interest to them.

An initial degree awarded by an approved degree awarding body; or a non-graduate qualification which the University of Wales has deemed to be of a satisfactory standard for the purpose of postgraduate admission; for candidates whose first language is not English: IELTS score of at least 6.0; routes for exceptional entry are available to candidates who have a minimum of 2 years experience in a relevant field.
